The mornings are definitely fresher and my tummy is telling me to get as much comfort food in it as possible, I for one am totally OK with that! With the abundance of cooking apples available at the moment it seemed only right to try out a recipe I’ve had saved for ages. Apple crumble cake. Yup. Combining two of my most favourite things and it turned out just as delicious as I’d hoped it would!
This is so simple to put together! We made ours on a Sunday morning and it had all gone by Sunday afternoon….
- 75g unsalted butter
- 225g plain flour
- 2 tsp baking powder
- 50g caster sugar
- 450g cooking apples (peeled, cored and chopped)
- 1 medium egg
- 1-2 tbsp milk
- cinnamon and raisins are optional
- icing sugar to dust
It’s really quick to put this cake all together so get your prep work done by greasing and lining a 7” cake tin and pre heating the oven to 200 C. Sift the flour and baking powder into a large mixing bowl then rub in the butter until it looks like fine bread crumbs, now mix in the sugar, apples, cinnamon and the beaten egg. It will seem like a very dry mixture (add the raisins now if you’re using them) and that there are too many apples but that is just how you want it to be. Pop the whole lot into the cake tin and smoosh down with the back of a spoon. Bake for 40 -45 mins or until a skewer comes out clean. Give it a thick dusting with the icing sugar and voila! This cake is delicious at any time but best served warm. The ultimate Autumn comfort cake.
